Dutch Oven Beef & Cornbread

Need a quick and easy dinner that also makes delicious leftovers? Try this mix of beef, corn, and cornbread.

Preheat the oven to 375 F.

Defrost and cook 1 lb of hamburger. Drain any grease from the pan.

Mix one box (8.5 oz) of Jiffy cornbread with 1/2 cup of water, 1/3 cup of vegetable oil, 1 large egg, and 1 cup of shredded cheddar cheese. Stir or mix until blended.

Once the mix is blended, add 1 can of corn (drained) and 1 can of cream corn to the bowl and continue to mix.

Spray the dutch oven with cooking spray.

Pour just enough of the cornbread mix on the bottom of the dutch oven to barely cover the bottom.

Spoon hamburger on top of the cornbread mix.

Pour the rest of the cornbread mix over the top of the hamburger.

Bake for 30 minutes, or until golden brown and cooked all the way through.

ADDITIONS: For more variety, add green beans and sautéed onions and peppers to the mix. If adding more vegetables, be sure to add another box of cornbread and double the other ingredients.
