Cowboy Casserole

Howdy! Cowboy Casserole will have everyone asking for seconds, or maybe even thirds!
Defrost two pounds of Back Forty ground beef.
Ingredients
- 2 pounds of Ground Beef
- 1 Onion
- 1 Pepper
- 2 teaspoons of Brown Sugar
- 1/2 teaspoon of Butter
- 1 can of Cream of Mushroom Soup
- 1 can of Rotel
- 1 can of Cream Corn
- 1 cup of Milk
- 1/2 cup of Sour Cream
- 2 cups of Mexican Blended Cheese
- 1 to 2 cups of Hashbrowns
- Sweet Potato Fries or Tator Tots
- 9x13 cooking pan
- Brown Ground Beef.
- As ground beef is browning, chop up and saute onion and pepper with brown sugar and butter.
- Mix Cream of Mushroom Soup, Rotel, Cream Corn, Milk, Sour Cream, and 1 cup of cheese in a bowl.
- Grease pan.
- Add hashbrowns to bottom of the pan. Add hashbrowns depending on how thick you would like them on the bottom.
- Add hamburger to the mixture in the bowl. Then pour mixture on top of hashbrowns. Add choice of fries or tator tots to the top.
- Add remaining cheese to the top.
- Cook in oven for 30-40 minutes.
